A Destination

We began raising tropical plants, primarily gingers, in 2007. We soon decided we wanted to create a sustainable farm with poultry, ginger, produce, and rabbits produced using organic practises where we could capitalize on the on farm synergies. We try to raise, breed, grow, harvest and butcher all our products on the farm where we can control the quality our customers deserve. We also have commited to preserving heritage animals and plants by selecting the finest examples of what our ancestors developed and reproducing them, for posterity, on our farm. We sell our livestock to individual customers at the Woodlands and Eastside Farmers Markets and to the finest chefs in Houston including Justin Yu/Oxheart, Chris Shepherd/Underbelly and Ryan Pera/Revival Market. We are grateful for their patronage.

Freedom Ranger Chickens

  Our main meat chickens are French Label Rouge Freedom Rangers. These birds were bred using Rhode Island Reds and Plymouth Rocks, both heritage breeds. The Freedom Rangers were developed over the last 60 years by the French to satisfy their pastured, free range gourmet Label Rouge program. They are large red chickens that range over broad areas and graze for about 20-30% of their diets. They have a very balanced amount of white and dark meat and are perfect for whole bird cooking preparations.

  All of our birds are pastured and free range so they develop lean, firm, textured meat with a wonderful depth of flavor. They are fed a custom blend ration free of antibiotics and hormones and are supplemented with sprouted grains to further enhance their flavor. We custom process all our birds on the farm using our State licensed butcher shop. We do it all, one at a time, using sanitary methods so we don't have to put chemicals on them, like most processors must. We control all aspects of their production to insure you receive the finest poultry available for you and your family.

  We recommend that all poultry be brined prior to cooking if you have the time. It's simple to do and greatly enhances the tenderness and moisture content of the birds. You just dissolve 1 cup of salt to each gallon of water necessary to cover the poultry to be brined. You can further enhance the flavor by adding herbs or citrus rind to the brine. You submerge the bird in a pot of cold brine and keep in the refrigerator for 24 hours, rinse the bird off with cold water and then cook as desired.

French Guinea Hens

   Our French Guinea Hens are from imported bloodlines. The French eat guineas on special occasions and have developed birds that are larger than the wild type with more meat. Guineas taste similar to pheasant and can be used in the same recipes as pheasant or chicken. They are quite lean so should not be over cooked. They are spectacular browned and braised in a Dutch oven or crockpot. We do prepare them in our smokehouse with awesome results!

  We raise our guineas in moveable open bottom pens. These are moved daily to fresh pasture. We feed them a custom blend ration that is antibiotic and hormone free. They also receive sprouted grains along with all the grass and bugs they can find. We custom process all our birds on the farm using our State licensed butcher shop. We do it all, one at a time, using sanitary methods so we don't have to put chemicals on them, like most processors must. We control all aspects of their production to insure you receive the finest poultry available for you and your family.

 

Heritage Turkeys

  We raise two breeds of heritage turkeys, Blue Slates and Bourbon Reds. These birds were developed in the 1800s and have the conformation of a wild turkey. They are listed as a threatened domestic breed and are also an "Ark of Taste" breed of distinction. When you taste one of ours you will agree. These birds are very different from the broadbreasted breed that is commonly raised and sold in the grocery store. They are smaller, can breed naturally, hence sustainable, and forage for about 60% of their diet.

  Our turkeys are raised in oak forest understory where they feed on dewberries, beauty berries, and acorns along with bugs and grasses. This unique forage gives them an unmatched flavor profile. Acorns are similar in oils to olives and the fat on these birds is quite orange in color. They also receive our custom blend of antibiotic and hormone free feed. We custom process all our birds on the farm using our State licensed butcher shop. We do it all, one at a time, using sanitary methods so we don't have to put chemicals on them, like most processors must. We control all aspects of their production to insure you receive the finest poultry available for you and your family.

  Turkeys are available for Thanksgiving and throughout the holiday season by reservation.

American Blue Rabbits

  Our American Blue Rabbits are a heritage breed that is long bodied, lean, thin boned and fine grained all white meat. They are a threatened breed but we are working hard to preserve them with a diverse bloodline herd. The "Ark of Taste" organization lists them as a animal of distinction and we think you will agree with us, they are as good as you will ever taste!

  We produce the finest rabbits by breeding to a standard of perfection. We want hardy animals that do well on pasture. Ours are moved onto fresh pasture at 6 weeks and are butchered in our on farm licensed abattoir at 12 weeks. Their diet includes a natural grain and alfalfa ration that we supplement with sprouted whole grains and organically produced vegetables. All this effort produces a special meal for our customers.

Grimaud Muscovy and Pekin Ducks

We breed Grimaud Muscovy and Pekin Ducks for our meat production.  Muscovies are the leanest duck breed raised domestically. They are a large breed with very large breasts and make an excellent roasting duck for special occasions. We smoke our 22 week old ducks for Thanksgiving and Christmas. They are an excellent alternative to turkey. They butcher out at 8-10 pounds and have crispy rich skin and succulent flesh. Pekins have a little more fat layer and are great if you want to remove the breasts to sear or smoke and confit the legs. 

  Our ducks are raised on our 1 acre pond with several acres of pasture. They are fed a custom blend ration free of antibiotics or hormones. We cultivate duckweed, a high protein water plant, in our ponds, that the ducks love. In addition, the ducks have all the bugs and grass they can consume. We custom process all our birds on the farm using our State licensed butcher shop. We do it all, one at a time, using sanitary methods so we don't have to put chemicals on them, like most processors must. Texan Pioneer Pigeons   

  Our pigeons were developed right here in Texas. They are sex linked so the males and females have different colored plumage. This is a real benefit since pigeons are difficult to pair up for breeding. They are identical in appearance. These are a large breed that produces two 1.25 lb squabs 6-8 times per year. Their diet is a variety of grains and legumes along with sprouts and some of our custom lay ration. We breed them in colonies with 8-10 pairs per enclosure.

 Embden Geese

  Our Embdens are a large heritage breed developed in Germany in the 1700s. They grow very fast, utilize pasture for 80% of their diet, and reproduce naturally. They are raised, with our ducks, on our 1 acre pond and graze throughout the farm on green pasture. They are leaner than duck but have a similar depth of flavor. We smoke them whole and they make a fabulous holiday dinner. You can also remove the breasts and use them as you would a fine steak, and use the legs and thighs for confit or sausage.

Asian Black Chicken

As the name implies, these birds have black skin, bones, and grayish flesh. The breed is referred to as Silkie chickens. They have an extra toe on most birds and their feathers have no structure so that they appear as hair or fluffy feathers. The females all have fuzzy topknots that look like a pompom on their head.

  Black chickens take 4-5 months to reach harvest size so most producers don't want to bother with them. They have a slightly gamier taste than regular chickens and roam far and wide so have greater muscle development and muscle equals taste. The Chinese consider them to have medicinal properties and research shows them to have 2-4 times the carnosine found in most chicken. Since they are older birds, they are best used for soups, stews, or braised dishes. One of our customers browned the legs and thighs and then braised them in red wine with onion and garlic; they were a big hit.
